Description
Rye is an ancient grain with a rich distinct flavor with lots of health benefits. It is high fiber, high protein, but low gluten so makes a dense bread on its own like pumpernickel. It works great combined with high gluten wheats like Red Fife and wonderful in fermented sourdough bread. It also gives a good boost to your sourdough starter by adding a small percentage of rye flour to it. Sourdough rye and cheese served with a potato soup. Yum!
