Description
A hard red winter wheat, this performs well in whole grain breads with its good gluten content. Brought over in the late 1800’s from the Ukraine, Turkey Red became the primary wheat planted in the plains including Kansas and South Dakota. As it was modernized over the years to accommodate mass production, it no longer remained the same grain it once was, modified to big production and high starchy endosperm content for white flour. Thanks to those farmers who valued preserving and restoring the old, Heirloom Turkey Red Wheat has the full flavor and nutrition it was meant to have for delicious, nutritious bread baking.
